Product Description
This production line is specifically designed for producing saj bread and consists of several key stages. The process begins with the dough kneading stage, followed by precise dough cutting using a cutter specifically designed for saj bread dough. After cutting, the dough proceeds to the fermentation stage, where a specialized fermentation system with layered scrapers ensures the required fermentation process. The fermentation duration ranges between 10–15 minutes. Next comes the rolling stage, where the dough roller is designed to handle the sticky and soft saj dough with care. Once these stages are completed, the dough is transferred to the baking cart, where the operator performs a simple dough opening process before it moves to the baking stage. In the final stage, a machine equipped with six rotating saj heads is used to speed up the baking process and streamline the production workflow.
